Subject-Tater Tot Casserole=dinner last night

So. Daniel did send the boys both to their room last night from the table. Then he went and talked to them. Logan came out and said he was sorry and could he have a new bowl(they have a bad habit of smothering their food in BBQ or ketchup before trying it-working on that, just did not  catch it in time...)so I gave him a new bowl and he ate it. A few moths ago I had to lay down the *you eat what i make* law. I was just getting so drained cooking 2 meals every evening... so I feel your pain. After a few weeks of going to bed hungry the boys have finally learned that i'm not teasing, they have to eat what I make. I too try to make at least one thing that every person likes, but some days they whine about things I KNOW they like! arrrg, it frustrates me so much.

I'll make a post (or a comment if I remember :)) of a few recipes that work for us. Maybe your kiddos will like them.

My youngest is my picky eater. She's getting better but we still have issues. For a long while she was anti-casseroles. Until we tried this chicken casserole.

1 bag herb seasoned Pepperidge Farm stuffing
1 stick of butter, melted
1 chicken cooked and deboned
1 can cream of chicken soup
1 can cream of celery soup
2 can chicken broth

Mix croutons and melted butter. Spread 1/2 into casserole dish (I use a 9x13). Layer chicken on top. Mix soups and broth together. Pour over chicken. Top with remaining croutons. Cover with foil and Bake at 350 degrees for one hour.

My notes: I rarely use a whole chicken. I'll just cook up a couple chicken breasts and dice them up or use canned chicken (I can my own) and put in as much as I want. Occasionally I'll also throw in some veggies that I know my picky eater will eat and opt for turkey instead of chicken, depending on what I have on hand. It's easy and it goes over really well.
