First, I must preface this by noting that I am not versed in anything Japanese and I do not know anything about the many nuances of sake. If you ever make it out to Berkeley (or the SF Bay Area in general), there is a sake factory right down by the waterfront which offers $5 tastings, for 5-6 different types of sake (among six different courses, or design your own custom course among everything they have) They also have bargain prices on all of those things in bottle form. It's pretty awesome!

Also, this settles it, I'm going for Japanese tonight...

Awesome recommendation! I'll seek such out should I ever happen that way. This brings me to note that I actually found Cali' lovely from my brief San Diego visit, though I'd still not like to live there. ;-)
