A neat concept. With the right group, you could produce some very inventive experiences, and everybody would share in the creative process. I'd definitely try this.
That said, having done improv for a while, I'm leery of "Yes, And" as an activity in any context. It's actually pretty hard to do it well - making it constructive is a learned skill. I'd roleplay this way with certain groups of people, but definitely not with others. Heck, not all of my improv guys are people I'd play "Yes, And" with.
As a parent, by the by, I think you're making great use of it with your kids. That's just cool.
