most delicious cookies

This recipe is adapted from one printed in the local newspaper as "Landon's Incredible Cookies".



Ingredients:

4 1/2 C. flour (mix whole wheat, white, and oat as desired)
2 t baking soda
1 t salt

2 C unsalted butter, softened (ghee is good too)
1 1/2 C. white sugar
1 1/2 C. brown sugar (packed)
4 eggs
5 t vanilla (or 2 t vanilla and 3/4 t almond extract)

Additions:
3 C. combined: oatmeal/wheat germ/corn flakes/granola/fiber-type stuff
3 C. combined: chopped nuts/raisins/dried fruit/unsweetened coconut flakes
3 C. combined: chocolate chips/butterscotch chips/chocolate chunks/etc. sweet melty things

Stir flour with baking soda and salt. Set aside.
Stir together the 9 C. of additions. Set aside.
In very large mixer bowl, cream butter with sugars; add eggs and vanilla and cream more.
Blend flour mix into butter mix, gradually.
Stir in the 9 C. of additions, gradually, by hand or with the mixer on slowest speed.

Heat oven to 375 degrees F.
Drop by well-rounded spoonful onto baking sheets (generally I haven't found greasing necessary; parchment paper is nice if you have it). They don't spread a lot, but do flatten somewhat. Bake 9-11 minutes, until bottoms are lightly golden brown. Cool on sheet for a couple minutes, then remove to wire rack, cool.

Both dough and cookies freeze well. The dough is also delicious raw.
