I'd check out vegetarian not vegan web sites, especially ovolactavegetarianism (that is, vegetarian but you still eat eggs and drink milk), and look for stuff that's definitely about vegetarianism as a dietary option, not about OMG ANIMALS IS NOT FOOD! craziness.
I'm on a psuedovegetarian diet myself (I don't eat red meat) and that's pretty healthy if you balance everything out. Remember, fish is, for the most part, pretty good for you; high in protein but low in fat.
If you're losing meat entirely, you need to replace the protein and iron (you don't want to be anemic) in your diet somehow. You can get protein from beans and certain vegetables, but the iron is harder to replace (unless you're in the habit of chewing on anvils).

I will give you a little tip though: Juice. Drink it.
Especially berry juice (gooseberry, elderberry, redcurrant, cranberry, blackberry) is good source of vitamins and a lot of them have beneficial effects on your health, plus they're usually a little lower in sugar levels than orange and apple juice.
Yoghurt and juice make a simple but tasty and filling smoothie.

On a side note, we have a basketball/tennis court at my apartment complex and neighborhood behind it for jogging if you're game =P
