What is the differente between Minor and guest Star?

Minor Character / Secondary Character: a character that reappears from time to time throughout the series - ex. Jaden, Thom, Birkhoff, Amanda, etc.

Guest Star / Recurring Character: a character that usually makes a special appearance, often playing a major role into an episode - ex. Owen, Ryan, Roan, Malcolm, etc.

The difference is slim, but usually the recurring character return is often based on popularity, whereas the secondary character, is there to support and add to the plot (but sometime isn't considered essential to the storyline).

Guest Star does not include a character just appearing in one episode, does it? :/

Yes, it can. Often the guest star character is only present for one episode (ex. Dana from 1x20 "Glass Houses") - in other word, it's a special appearance from a random celebrity :)
