applesauce is more awesome than i thought?

can i REALLY use applesauce as a substitute (in certain instances) for egg? because i'm thinking that the corn muffins i made last night with one egg might have tasted pretty spiffy with the applesauce replacement. i might have to try it some time. after all, if it's awful it's just a waste of a 50 cent box mix and not the end of the world.

Depending on what else is in the mix, I might throw in another teaspoon of water and a couple of teaspoons of soy flour or corn starch as well, to give it more binding capability. You're losing proteins from the egg when you just use applesauce.

i HAVE used applesauce as a substitute in cookies and breads. however, corn muffins have such a specific texture, i'm not sure what applesauce will do to it.

i do prefer using banana as a binder because it adds a natural sweetness to it and is sometimes more subtle, and of course, no preservatives. [i guess it depends on what kind of apple sauce you use!]

totally tell me how it goes if you end up trying it!
