The origins of language start before the dawn of man, before the emergence of apes, before the emergence of primates. Some lucky ape didn't just wake up one day and know what a sentence was. Cats are strange, because their language abilities are very... self centered.

As for the dolphins, my best searches came up zilch for the studies of their communication, so my understanding in that area is anecdotal at best.
