Baked Banana Pecan Oatmeal

Apr 03, 2013 16:01

We love this oatmeal recipe. It's from the final issue of Everyday Food, Dec. 2012. I am very disappointed that this magazine has bit the dust. I loved it. I have every issue ever made and use them often.

We have made this oatmeal at least once a month this year.

It is so good! It makes a ton too. We get 6 servings out of one batch. With the recipe as is, 4 servings, it says it is 65 carbs. Sorry to tempt you!

I bet this is amazing. I had a baked oatmeal in Portland once that was to die for. I may make this on Sunday morning!

Eh... I see it requires a broiler, and we have broiler trauma in our home. (It always smokes wayyyy too much) So, I may not be able to make it :(

Do you have a kitchen torch or whatever those things are called? It's just to caramelze the sugar, maybe even the oven alone could work?

Hmm.. I don't have one of the torches, but maybe I can come up with an alternate idea.
