I <3 ham so much I had to get some on discount even after gorging on it at Christmas, and I essentially did the same thing - put a little water in the bottom of a roasting pan, covered it with foil, and left it in the oven at a low temp and (literally) forgot about it, and it was more falling-apart tender than I think it would have been had I remembered to take it out when I had planned to.

That's the way I've always made it. I've tried "fancying it up" from time to time but keep coming back to the original slow cooked-perfection.

Pig should taste like pig, because pig tastes good.
