Some Thoughts on Pumpkin Pie

First, it's never to early to worry about Thanksgiving. I've been increasingly frantic about it for about a fortnight now, starting when I realized that all the stores were skipping straight to Christmas. I did a Thanksgiving Part II last year since I felt abused and mistreated with no leftovers since we go with Gabe's family. I made the whole meal all over again for like 4 people and still made it as if there were 10...oops.

From experience, you can make the sides earlier (stuffing, sweet potatoes (probably depending on how you make them) earlier and stick them back in the oven when the turkey's done but resting. We thought ours was done before it actually was so the sides ended up on the bottom of the oven which was totally fine although required a lot more stirring so it didn't burn.

Good luck with the totally-from-scratch pumpkin pie! I've never attempted it myself as a can of Libby's pumpkin puree (without the spices premixed in; I like to add them according to the directions on the can) in my own crust is close enough to "from scratch" for me. :D

We don't have room in the fridge. It's really tiny - the fridge and the freezer fit under the worktop (counter), side by side :o(

Ouch! But doesn't winter in a cold climate mean you can cheat and just use the outdoors as a temporary fridge/freezer?

That's a super long day of shopping and cooking if you had to buy it all that morning and then cook it that morning and afternoon just to try to work around the lack of cold storage. :(

First- great to hear from you! I take it you're still healthy and happy over there?

Second- no reason you can't carve a pumpkin, put it in the window for a night and slice and dice it up the next morning!

Third- y'know, if it's that much of an issue, there's no reason we can't get together and mail you a coupla tins of pumpkin.

Miss Krissy found that Amazon.co.uk carries Libby's Pumpkin tins. And making puree is _super_ easy! The only problem with that is my local grocery store isn't large enough to carry pumpkins :o( :o( :o(

I would love your pumpkin pie recipe. So far I've made pumpkin scones, pumpkin cookies, and pumpkin butter. I have ambitions for a pumpkin cheesecake. Mmmm.

Here are the ingredents for the custard let me know if you need the instructions on how to put together. This is a two pie recipe I usually put one half in a crust and just make the other into a strait custard. All spices are ground

Large can pumpkin(29oz)
1 cup sugar
1 tsp salt
2 tsp cinnamon
1 generous tsp ginger
1/2 tsp cloves
1/4 tsp nutmeg
4 eggs
3 cups milk
