If I stick my iPod to another pc.... would my files on my iPod sync with that pc instead of adding to the iPod instead?

Yep :) The iPod is a hard disk by itself. You can even use it as a flash disk, if you want :D Also, you can sync the songs from your iPod to your PC by using a program. :D It's what I did when my user was deleted [which includes my songs] :)
