I've finally found the time to work on my cookie recipe again, unfortunately this alteration marks a decided weakening of the recipe. The biggest critique of the original recipe is that the cheese flavor was too strong, so in variation two I vastly reduced the quantity of cheese.
1 cup superfine sugar
1 cup butter (2 sticks)
3 tbsp Roquefort cheese
1 tsp vanilla extract
2 eggs
2 tsp baking powder
2 1/4 cup cake flour
2 oz semi-sweet chocolate
2 oz dried cherries
Assemble using the creaming method, refrigerate until cold then bake 375F for 15 minutes.
The reduction of cheese actually made the cookies taste both cheesier and removed most of the other flavors. A friend suggested dried cherries be added to the cookies, the next variation will have dried blueberries; I think it will compliment the flavor more.
