Thanks for this! I usually consider smoothies a summer thing, but this was just what I needed to balance out the pile of latkes I ate yesterday.

:*

I ran out of blueberries this morning. Banana also compliments beets, now you know.

OH OH opinion please: should I try making sweet-potato latkes?

OMG yes! I am wondering if the kids would be cool with this! It is so nutritious yet sounds so delicious!

It does have an ~essence~ of spinach (or beet; and it's less noticeable in the beet version or if you use fresh spinach, not canned), which I like because it's not like BAM, who put vegetables in my dessert, but I don't know how notoriously picky kid-types will like it. So try it first, maybe up the berries and dairy/soy?

It's all proteiny and vegetationy and goodnessy

do you use fresh or frozen spinach? we tend to have fresh in my house, but idk how it would do in a blender.

I used canned because I had it and it needed to go. Thawed frozen spinach would probably be best.
