We can't get away with "from the shop" - she wants details about the growth of raw materials,

Do children ever back down if you say "I don't know". I have a feeling not from my limited experience of kids at the yard (ages 4, 5, 7, 10). I have the advantage that they aren't my children so eventually I suggests they go and see if their mum wants them.

Yes indeed! I have trouble when I know the answer I am giving is over their head but I have no idea how to simplify it. I have the same problem with adults too!
