Mail servers are one of the few things I have never bothered with. I have never heard of a mail server that installs as easily as, say, an HTTP server. Not to mention, the technology behind it is so outdated, and it can be a huge security hole for spammers to exploit...
Due to some poor technology management at Tech's College of Computing (which I won't go into here) I had my mail migrated to a new server a couple weeks ago. It was not fun... it was supposed to be a one-day process, but ended up taking more than two days. However, I will credit them that when they did finish, I simply changed server names in my local config and everything just worked.
