Red Potatoes in the Crock Pot

I totally love red potatoes-fried, mashed, smashed, roasted, roasted & smashed-they are my favorite side dish. Lately I've been cutting them into bite-sized chunks, tossing them with olive oil, minced garlic, rosemary, and salt, and then roasting them in the oven until they're crispy on the bottom. It was very good. I actually skipped the meat portion of dinner & just ate these with a spinach-tomato salad.
