Chili Recipe

I made this batch of chili this weekend for the OLOTEAS Staff retreat. I modified it a bit from the "Lucky Chili" recipe in Not Your Mother's Slow Cooker Cookbook for personal taste and allergy considerations. I also cooked it for a shorter amount of time than the original recipe called for because of time constraints.

How did the coffee affect the flavor? And were there people there who weren't coffee drinkers that had comments about it? I'm mostly curious because I'm not a coffee drinker myself, and would be a bit wary of chili cooked with coffee.

No one commented on a coffee flavor in the chili (and I didn't tell them it was one of the ingredients). What little I tasted, I couldn't tell either. I think the tomato sugar probably counteracts the coffee bitterness. It did give the chili a nice color so that the tomatoes and beans really stood out.
