Some cakes are best made with a traditional butter-cake recipe, and others with genoise. (If you saw my most recent cake, it required butter cake for structural purposes.) I like the way a simple tweak of the syrup can add subtle nuances of flavor to a genoise. And in Baking With Julia, there's a recipe that's made with the technique of a genoise, but it comes out with the texture of a pound cake. I also like classic pound cake, of course... and sometimes I even like a basic sponge cake (just eggs, sugar, and flour ( ... )
