I have read so many googled examples, I could burst. But I still have NO IDEA what I'm doing.

I teach autistic kids...My philosophy is "teach the necessary stuff, and duck the punches." But for some reason, I don't think that's what they're looking for here...

Well, from what I've read about what you do, it seems like a lot of what you do is presenting kids with choices and getting them to the point where they, more often than not, make better / positive choices. I think that's at the core of what most teachers do..more or less.
