microwave scramble

I've discovered I'm a huge fan of microwave scrambles, because:
- I'm lazy & it's fewer dishes
- for me, the cooking oil in scrambles doesn't add any useful flavor
- I often have weird little bits of veggies left over from previous meals, and this is a great way to use them
- because of the leftover veggie bits, I can also call them garbage scrambles. "hey, I'm gonna make a garbage scramble. do you want some? why do you look horrified?"

GENERAL GUIDELINES

1. crack 2-3 eggs in a stoneware bowl. (at least for me: other bowls got too hot.)
2. add something else that might be tasty with eggs.
3. scramble
4-done. microwave 30-45seconds at a time, stirring at the end of each.
done. it's done when you go to mix & there's a very small pocket of liquid left. as you mix it in, that will finish cooking. :)
done+1. maybe add another tasty thing?

GENERAL GUIDELINES POSTSCRIPT

if you like lots of stuff in your eggs, you may need to microwave in 1min increments. however, it's better to aim low while you're still getting used to textures involved & to drop the time as you're getting closer to a finished scramble. eg, I love a lot of broccoli sometimes, and I usually microwave it like: 1min, 1min, 45sec, 30sec.

SOME TASTY THINGS FOR STEP 2:

- broccoli / kale / gai lan / insert your favorite brassica here
  - I learned that hard way that if you add too much starchy brassica (>2x the volume of egg) you'll need to microwave in 1min increments
- tomato, oregano, garlic
- mushrooms (best mushroom texture if mushrooms on top and not mixed until after the first round of microwaving)
- black beans
- add a good melty cheese or sour cream or cottage cheese to any of the above
- a splash of ketchup

SOME TASTY THINGS FOR STEP DONE+1:
- avocado
- a little spinach never hurt anybody
- any tomato that's better raw
- for a nice crunch: crumble some tortilla chips or crackers & mix them in
- freshly ground pepper
- sesame oil
- natto
- green onions
