mm's no knead bread

3 c warm water
1 or 1-1/2 T salt
1 or 1-1/2 T yeast
6-1/2 c flour

1. In large plastic container, combine the 1st 3 ingredients, then add the flour all at once, stirring well.
2. Partially cover and let rise 2 hrs. Don't punch down.
3. Cover and refrigerate from 1 hr to a week or more.
4. When ready to use, sprinkle cookie sheet with flour or cornmeal and sprinkle the top of the dough with flour.
5. Cut off or pull off about 1# (slightly larger than a grapefruit) piece of dough.
6. Using as little effort as possible, roughly shape into a ball and place on floured cookie sheet. Dough will be very sticky!
7. Cover remaining dough and return to fridge.
8. For shaped dough, let rest for 45 to 90 min.
9. Preheat oven to 450 degrees, placing pan filled with water below rack for dough.
10. Spray dough with water, sprinkle with flour, and make several 1/4" deep angled cuts in dough.
11. Place dough in oven and bake for about 30 min, spraying occasionally, until bread is browned.
12. Let cool to room temperature before cutting and serving.

... not the finest recipe for bread, but not bad, either. You may want to grease the cookie sheet prior to using.
