EMERGENCY SALAD DRESSING

1 part oil (richly flavored oils like extra virgin olive are tastier than flavorless ones)
1 part sour (any vinegar, real or fake lemon juice, pickle/olive juice, etc)
a pinch of pepper
a pinch of cheese can cut the sour if it's too much (or add more oil)
a pinch of salt can be nice
sometimes herbs can be nice

for a small salad, you can use about 2 to 4 tablespoons each of sour and oil. for a larger salad or a jar to keep in the fridge, you may wish to use half a cup of each. a 1:1 ratio is pretty tasty, but in my opinion if you're gonna go over on one it's better to have more vinegar than oil. anyway, instructions:

mix with a fork or whisk right before pouring onto salad, since oil & water tend to separate when not blended into a perfect suspension or packaged with harsh chemical binding agents. taste and adjust seasonings as necessary.
