1. My current thoughts for the version sans hydrated berries is to make the leaven with 1.5-2c water, 1c rye flour, and 1c rye meal.

2. I should also try toasting the sunflower seeds like the recipe called for. It's possible this will help yield a final loaf with more recognizable seeds.
