I haven't seen Sin City yet, but Schindler's List also does all black and white with color to accentuate. You know the part with the little girl in the red coat? Everything else is black-and-white, and you see her red coat I think 4 times.... playing, hiding, marching, and in a pile of dead people. Very powerful accent.
