i sooo thought about you when i was making it. especially since it quick and doesn't require much actual cooking time. i plan to mix it up...add corn, jicama, baby carrots, edamame--lots of different things. i would have had grape tomatoes, but they've been off the shelves here because of the salmonella scare.
