In other news, I'm on day 12 dairy-free! Not noticing much yet - my skin kind of freaked out for a few days, and it seems like some...drainage is happening, ahem.

That said, I am cooking a LOT and learning to ask questions and reading a ton and learning learning learning.
Don't you want to learn how to make my super-lazy soup?

Super-Lazy Soup

Look. If you are like me, you keep some frozen winter squash puree in the freezer. Look in the freezer section of your local hippie store, or maybe your commercial one. Also, if you are like me, you are extremely lazy.

Saute up some sliced white onion in olive oil. I don't even bother to chop it very well.

Then give the onion a whirl in the food processor or blender until it's pulpy and mashed up. (Skip this step if you're appliance-impaired or don't want to bother.)

Return the mashed-up onions to the pan, add squash puree which you have zapped in the microwave or boiled in a pan, and throw in vegetable stock or water to taste. (I suppose you could add milk or cream, but that would be defeating the non-dairy thing, eh?)

Add curry powder, salt, pepper, nutmeg, or other spices to taste.

Voila. About 5 minutes from start to finish. I suppose you could use other veggies, too, but I fancy the smooth texture of the squash.
