I was practically raw ALL DAY today... the only thing I ate today that wasn't raw was a piece of leftover pizza.
so here's what I made:
BREAKFAST
mix pineapples/cashews/almonds to make a pineapple nut paste/sauce
here's the finished product
then I cut up bananas, apples, blueberries, and raspberries.. layered them in a bowl with the paste in between each layer.
LUNCH/DINNER
soak dates (on the left) and sundried tomatoes (on the right) in water to soften them
cut up tomatoes, add them with the sundried ones, dates, garlic, and parsley grind up to get sauce.. btw, this sauce was SOOO good. I would totally eat it on pasta as well as the raw way on zucchini.
then I used my peeler on the zucchini in longer strips this time and put the sauce on top.. it was really good.. tim even liked it and ate two bowls of it.
DESSERT!
mix coconut oil, vanilla, avocado, cinnamon, cocoa powder, and agave syrup.
blend and you get a lovely chocolate pudding! I put it in the fridge to let it get really nice and cold. You wouldn't want to eat this everyday because there is a very high fat and calorie content.
I can't believe I've made all this yummy stuff and it was fairly easy. I do feel sometimes like I have much more dishes to clean doing things this way.. especially having to clean out the food processor all the time.. but if you think about how many dishes you use actually cooking, it's probably about the same.. and the time isn't really that much more either (so far - I've been doing fairly easy recipes). This is so much fun for me, kinda like playing with food as a kid.. and I have tim to try all my stuff. I can tell he's actually surprised at how good everything has been so far too. The chocolate pudding... while it's not AS good as real pudding.. is like 90% as good.. and that's not bad when you're craving chocolate.
anyway... i'm totally jazzed about all this raw stuff and tim and I have a little bet going that I can't be 100% raw for one month straight. I'm going to try starting January 1st, to do a month raw.. not only for the bet but because this book I'm reading says that in a month I'll notice major changes in my body and health.. so wish me luck! I can't wait to start it! (I'm not starting now cause I know I'll fall off the bandwagon at christmas when it comes time to eat tamales and all that good stuff at my aunt mary's christmas party).
