So I gave my two weeks notice today. Instead of being angry and irritable, my boss actually seemed rejected and disappointed in himself for not seeing my misery. My mood changes back and forth from elation at finally ending my employment to pity for my boss. I felt guilty about it most of the day

You have to move beyond entry-level positions eventually. Just be grateful that you are competitive enough to be a little selective when it comes to chosing your employment, and not the other way around.

I'll be ditching this whole buoy hauling operation once I can go through Marine Science Technitian school. The waiting list is a year, so it may be some time before I get to do what you just did.
