Do you have access to the Sonna Longden series (books and tapes)? She includes many stick dances among her directions.
Basically, you can do simple stick games - hit sticks on floor, then cross in front of you - to the steady beat of any music. The younger ones will be fine just playing with the steady beat.
For older kids you might have them do what I call 'partner clicks'. Give them four beats to make up a pattern with each other using the sticks, and at least one move must be some kind of partner click (usually best to keep that to clicking in front of each other). Then see if they can perform their pattern to the beat of whatever music you may have available.
