Feb Club Feb 6th: Favorite Comfort Food

Appropriate for wintertime and long shut-in days....

Mine is egg potato - baked potato (400 F, 1.25 hr, rolled in butter and salt) with a soft-boiled egg or two cracked on it and mashed in along with more butter and salt and maybe some shredded cheddar.

What's your favorite comfort food?

Breakfast for dinner! Which usually means scrambled eggs and muffins, but sometimes pancakes.

(Have I mentioned, by the way, that that maple sugar you gave me is INCREDIBLE when you use it to caramelize bananas? and then when you put those caramelized bananas on top of pancakes at the end of a stressy day and you need comfort food? :)

No, but I'm not surprised. Maple sugar FTW. You can totally pick up some more here when you're out in May; it's very reasonably priced.

I probably will! There's a chance I'll have used it all up by then :) We have it around here, too, of course, but most things are more expensive, alas.

One small purple-outside-yellowish-inside sweet potato, stabbed with fork, wrapped in wet paper towel, and microwaved. The end. When I have more supplies around, ddeokmanduguk (wonton soup with Korean-style ricecake, an egg stirred in, sometimes a bit of beef, and chopped scallions and kim/nori on top), since one can keep mandu in the freezer.

first of all, the egg in potato thing sounds amazing.

second of all: IHOP pancakes. american cheese omelette. american cheese grilled cheese. campbell's cream of chicken soup. any or several of the above.

Oatmeal with an apple chopped into it, cinnamon, and either honey or maple syrup. If I really need comfort food, I tend to make it on the sweet side.
Soup of almost any kind and biscuits.
