Caribbean Sweet Potato and Beans Stew

It's called a stew, which would normally be a main dish, but I used it for a side dish for my first Around the World meal in a long time and it worked out wonderfully.


1 large can sweet potatoes
1 regular-sized can cut green beans
1 regular-sized can (about 15 ounces) red kidney or black beans
14 1/2 ounces water or vegetable broth
1/4 teaspoon onion salt
2 teaspoons Cajun seasoning, or Caribbean jerk seasoning
1/4 teaspoon cinnamon

Combine all ingredients in slow cooker, mixing well.

Cover; cook on Low for 5 to 6 hours or on High for 3 hours.

With it were
1 1/2 pounds chicken
1/2 cup flour
2 Tablespoons butter
8 ounces pineapple chunks, with juice
1/2 cup brown sugar
3 Tablespoons soy sauce
1/4 teaspoon ginger
1/4 teaspoon paprika

Remove any skin and bone from chicken. Cut chicken into small, bite-sized pieces.

Mix chicken thoroughly with flour and butter. Make sure all chicken pieces are coated with the flour.

Add pineapple chunks; mix in thoroughly. Add all remaining ingredients, stirring after each is added.

After all ingredients are mixed thoroughly together, pour into a cooking pan and bake in oven at 350 for about 45 minutes, or until chicken is done and tender.

and the admittedly least favorite of my family, though I myself enjoyed it,

1 cup water
1/2 cup sweetened condensed milk
1 Tablespoon butter
3 1/3 cups flour
2 teaspoons of yeast, or 1 teaspoon baking soda and 1 teaspoon lemon juice

Stir together water, condensed milk, butter, and flour. Add yeast, or baking soda and lemon juice mixture, last. Knead bread for a few minutes. Drizzle honey over top of bread; may also add melted butter or egg white, to taste. Bake bread in oven at 350 for 35 minutes.

I think I'll do Germany next. There's no need to do a special for China for, as y'all know, I'm constantly cooking Chinese! In fact, we had this

1 pound boneless skinless chicken breasts (can be done with other parts as well)
3 eggs
1/2 cup and 2 teaspoons flour, divided
1 1/2 Tablespoons sherry
3 Tablespoons sugar
3 Tablespoons soy sauce

Cut chicken into small, bite-size pieces. Stir chicken together with eggs and 1/2 flour until eggs are thoroughly beaten and chicken coated. Then add sherry, sugar, soy sauce, and remaining 2 teaspoons flour. Stir everything together well. Bake in oven at 350 for 45 minutes.
