I'm a little bitter that I can't take an Italian class next quarter because of this stupid Intensive Psych program. I may just have to sit-in on the italian film class so my speaking skills don't go to shit. Do you think it's too late to drop Psych and pick up Italian as my major? And keep the Italian. You clearly want to pursue it. Who cares about graduating "on time"/failing? I'm doing 5 years now and just discovered German. It's way cooler than just following some agenda.

Look at you, all suave and Euro-chic!

I agree with everything quixote322 said. Watch Italian films without subtitles (that's why DVDs are great -- you can turn the subtitles off!), and read Italian-language books (read Neil Gaiman's books translated into Italian -- how cool would that be?). And talk to an advisor about what your options are, if you really want to (and can) switch to something else.
