The school where I worked ran one every year for the Year 7s, and I was sometimes involved in running it, but never running in it. Standard crepe-style pancakes were made in advance in the Food Tech room, and they were relays - each runner had to toss his/hers a minimum number of times during the race.

My pan broke - the wooden handle swivelled around turning the pan itself upside-down and droppingn the pancake on the ground - that was me out of the race.

I'm not sure how a Racing Pancake would be either sweet or savoury; my pancakes acquire one of those adjectives by virtue of having Stuff Put On Them, and I wouldn't want to run along trying to flip them in the pan after covering them in, say, honey...
