I'm not sure how period this is, but one idea I've heard for altering a gown or tunic that's too short is to add a decorative band of some pretty fabric at the bottom to lengthen it.
Oh, and some kids think hand-sewing is fun and can probably be suckered into helping make their own stuff at a certain age. (I remember sewing a dress for my Barbie once, long before I was in the SCA.)
I feel slightly better that we're both such shameless procrastinators, but not much -- I'm *so* sorry not to have gotten back to you about the kids class. I have no excuse except the part you know about where toddlers EAT YOUR LIFE...
