That really sounds good, though I'm not sure what the Chia Fan cooking wine is. Do you know where I would likely find it in a supermarket? Is it a white or a red cooking wine? Or is it more of a cooking sherry? Or is it a rice wine for cooking? I'm just trying to think of something that I could potentially substitute for it if I can't find it at my local stores.

Thanks for the suggestion. I'll have to give it a try and see what I come up with...

It's a chinese rice cooking wine. If you have an asian grocier anywhere nearby, they probably have it somewhere. Hope you enjoy it!
