Here's a sauce I like for pork loins, if anyone is interested. You'll have to forgive me for using terms like "a lot" or "a little" it lieu of measurements, but I'm afraid I was just pouring things out with little regard for anything but the sauce's taste

That really sounds good, though I'm not sure what the Chia Fan cooking wine is. Do you know where I would likely find it in a supermarket? Is it a white or a red cooking wine? Or is it more of a cooking sherry? Or is it a rice wine for cooking? I'm just trying to think of something that I could potentially substitute for it if I can't find it at my local stores.

It's a chinese rice cooking wine. If you have an asian grocier anywhere nearby, they probably have it somewhere. Hope you enjoy it!
