I made this for dinner last night. It was quite delicious, even though the tortillas absorbed too much liquid and disintegrated while cooking. Next time I won't bother rolling the enchiladas - I'll simply layer it all lasagna-style, and see how that works. The real star of this show, in any case, is the super garlicky pumpkin sauce! Its so cute that as I typed that response to your original post, i was thinking back to how i used to mention to you about cardboard and whatnot. Hehehehe.
And yes, i do like to eat cardboard. My favorite is sauteed cardboard. I think The Iron chef did a show once about sauteed cardboard using air.

That looks awesome - delicious and beautiful! I will definitely try it with my veggie son (he gets home on Sunday, yay!).

You can sprinkle this over the enchiladas in the baking dish. Or, you can eat it. Take a guess which I did.
LOL! It's the only sensible option. . .

Thanks :-) I think I'm going to make your version this week - I bought the corn shells already, but I couldn't find canned pumpkin - I'll have to try another store. (Apparently they don't agree with your title - they think pumpkin IS just for pie!)

Yes, we have two cats. We used to have three, but one died about a year ago. She was old, and crotchety, but I still miss her :-) Do you have cats?

p.s. They're brother and sister - and the only reason they were curled up so cozily together was because the radiator was nice and warm :-)

I made this last night - it was delicious! I am taping your recipe in my cookbook so that I can always find it. The spinach was a great idea, and the pumpkin seeds on top: fabulous! Since I had the olive oil heating up anyway, I rough-chopped a few cloves of garlic and threw them in, along with the cumin and chili powder. I also added an chipotle pepper in some adobo sauce. My family loved it - and my husband usually doesn't consider a vegetarian entree a complete meal :-)

Oh, I'm glad you all enjoyed it! I put garlic into the spinach mixture too, actually - and I completely forgot to list it. :o\ I should edit that. I bet the chipotle was GREAT in there! Did you add it to the filling? Or to the sauce? I bet whirring it into the sauce would be amazing...

I made this again for dinner tonight (my veggie son is coming home for the weekend :-). We'll eat later - right now it's safely in the refrigerator. It smells awesome - thanks again for the veggie recipe!
