If I cook anything with lots of grease, I pour the grease into an old pickle jar or jam jar and toss it. But then, I don't cook very often, or cook things with grease. My mom used to store it under the sink and toss it at the end of the week or two, but she cooked every night.

I do that when I pan-fry burgers or brown ground beef and the like, or when my bacon-grease jar is full. It's the bacon grease that I specifically save.

Poured into a clean "tin" can as I fear a jar might crack with the heat. And I save it for quite a while* -- a few weeks or so -- in case I need to use it. (It probably keeps a lot longer than that.) And I eventually throw it out just before the next bacon episode, which might be every two months.

*in the fridge.

My mom always would collect grease in a coffee tin under the sink... I used to do that, but now I just sop it up with paper towel and trash it.
