Making horseradish

Stefan gave me some horseradish plants earlier on this spring so I put them up by the garage. You are supposed to harvest them in the months with R so I was going to wait until September to make horseradish sauce but that month and almost all of October slipped away before I got around to picking and processing it.

Wow, that's a lot! I've never eaten it before. What do you use it in? Is it a topping?

We use it for a spread on roast beef and we also have a stuffed potato recipe that calls for creamy horseradish. I'm sure there are other ways to consume it but those are the two ways we use it for. We'll eventually get through it. :)

You have a Vitamix?! We kids bought it for Dad and Mom's Anniversary a few years back. I love it, especially for making smoothies. What do you use yours for the most?

Well - I use my Vitamix a LOT! Making milk, various cashew cheeses, gravies, ice-cream, hummus, fruit sauce, smoothies, sauces, toppings (salad dressings, ketchup), the wet mixture for granola, and even just stuff like bread crumbs or chopping nuts. It's wonderful - it's able to do more than any other blender. :)

Guess we'll see what Farley prime rib tastes like. He should be ready the beginning of Nov. I got 20 LB of jerky...I might even sell some to you. Haha.

I was just counting the down the days until you get back today to know how long it will until my peace is disturbed. Ha! I miss my laptop so I guess I'm looking forward to you coming back since it has to come with you. Actually it will be nice to have you back...you can start discing, take over mouse control at your house, and all that fun stuff. :-0

Something delicious to use it for - I recently had this at a friend's house. Thinly sliced roast beef (the real stuff, not deli meat) on a hoagie roll, spread generously with horseradish mixed with mayonaise. Then you dip it in beef broth (which was made with the herb ox paste) as you eat it. SOOOOO yummy!
