If you are planning on renting/selling your product to restaurants: Find trade magazines that cater (no pun intended) to the food service industry.

Consolidated campuses with a central comissary may also be useful so look up trade magazines that deal in campus support and logistics.

This might sound odd, but you could also try vegetarian news sources. Off hand, I can think of Vegetarian Times (magazine) and Veg News (www.vegnews.com) as very popular sources, and they often cover environmental stories as well, so I think you'd fit in. It's probably not the most direct way to reach potential OPC customers, but people who run vegetarian-friendly cafes and restaurants often read veggie publications (we kinda have our own little universe) and might be interested in knowing about it. Plus it would get the attention of a group that tends to be environmentally-conscious and very talkative. ;) If I think of any other specific publications, I'll let you know.
