If you're making bagels, you'll find that some recipes call for something like "malt syrup" or something like that. Adding this substantially increases the tastiness and authenticness of the bagels (at least it was true when we made them). While in general somewhat hard to find, I believe you can find it at the PCC on 65th. Too bad I didn't know that you wanted to make bagels, or I would have given you the bagel maker (which is somewhat cheesy, but does make some of the steps easier) that we got rid of when we left Seattle.

I'm glad I got the chance to make bagels The Hard Way. I can now really appreciate bagels that are made well, which was my main intent aside from having tasty bagels to eat.

I'm curious about your description of the bagel maker being cheesy. For some reason I imagine the packaging showing a 70's era family with light brown hair gathered around the bagel maker, having one of those Fun For The Whole Family moments.
