Made a steak bordelaise with matchstick frites and sauteed button mushrooms. I've had this bottle of red wine forever, and opened it tonight thinking it might be vinegar, but it was really, really good. So, I made a bordelaise sauce with 14 year old red wine. One of the big rules is, don't cook with wine you wouldn't drink yourself out of a glass. But this was pushing it. This would probably be a $50 entree at a restaurant if they were using the same wine.

I have dropped $50 bottles of wine on the ground and sobbed! For an entree, I figure 99% of the stuff you cook is easily worth $50 in any restaurant from what I have seen.
