Grilled Clams and Mahi-Mahi

This Saturday I had some friends over and we sat by the pool and grilled. Sometimes it's nice to live in apartment complex, there are some amenities included.

I find that mahi-mahi tastes best when marinated with lots of citrus, including orange juice and slices, lime juice and pineapple. :)

Do you marinate in straight citrus juice (no oil or other liquids), and if so how long? My fish-guy recommended half an hour in straight lime juice for half an hour with my mahi-mahi, but I haven't tried that yet.

Pure lemon / lime juice would start to "cook" the meat and change its texture, like a ceviche. Do you notice this with yours? Have you made any ceviches?

I really like citrus, especially lemon and lime, this summer. I promise I will try a pure citrus marinade next time with my mahi-mahi. It grills so beautifully I plan to make it a lot!
