I don't make a lot of substitutions generally. Ordinarily I'd say go ahead, but this is supposed to form a kind of custard that holds the pudding together and I do not know how egg beaters behave.
I'd make it by the book the first time, and then once you know what it's supposed to be like try substitutions. Great for cold days!
