BTW-Cook's Illustrated had a pretty easy and tasty-looking recipe for potato roesti. It calls for frying in butter, but I'm sure olive oil or other non-dairy fat would work just as well. I'm hopeful to give that one a whirl some Saturday.

if you don't have any chile, smoked paprika does the trick as well.

I'd say, go for it! From the recipe, I doubt anyone will even think to ask whether it's tofu.

I grew up eating tofu scramble all the time, at least a couple times a week. I've never understood why I tell people that and they look at me like I just told them I grew up on a free-love hippie commune.

It's good stuff, people.
