I have no idea why I'm so excited about finding a certain recipe but I am.  I was looking for a recipe for this filipino noodle dish when I came across a recipe for Ukoy which is a squash fritter with a shrimp on top.  I went food shopping today and bought all the stuff for it so I'll make it this weekend and let you know how it turned out.
