I will definitely do the fat one-- a lot of people have misconceptions that all fat is bad :(.
As for fortification I can do a general article on that-- the issue is more of an opinion than fact based, but I can talk bout fortification period :).
Eh not so much a job as its only 2 articles a month, but its something to put on my resume and makes my parents hate me less :X.
