Might crochet work? Because there's only one stick and one active loop (I think - I've not progressed beyond single chain!), it'd be less likely to come off the needles and unravel a different amount each row in the way that knitting would so may be a bit more robust... Or maybe finger knitting (especially if you do it using loops)?
Would keeping the two of you occupied with Duplo/Sticklebricks work? (It's not necessarily productive in the same sort of way, but you'd be making something grow with your hands, she'd be "helping" and developing her motor skills, and the pieces come apart and go together easier than Legos do (plus are too big to be a swallowing risk).)
I hope this is a temporary thing and lifts soon, and that Matt's being extra-nice to you in the meantime. Also, if you haven't mentioned this to the doctor, it might be worth doing!
