Finally, a weekend with nothing to do, nowhere to go. I wanna be sedated! The past four weeks have been a whirlwind of birthdays, parties, muddy camping, berry picking, eating, and baking. I have a recipe for pistachio macarons that are to die for - they turn out with a gentle green tint. The first time I made them they were perfect. The next time, a total failure. Probably won't try that again...

Does it use all pistachios, or some pistachios and some almond? The most successful recipes use a mixture of both flours. At my old job, our pistachio macs didn't have any pistachio in the cookie itself, just a pistachio buttercream filling.

Looking at the picture of the recipe in that post, even the ones in the book don't look perfect! I'd try using half almond meal and see how they come out.

Or you could also try drying out the pistachio meal in the oven (very low!) for a few minutes.

(The pictures of the blogpost look like that particular batch was way overmixed, but that's just MHO.)
