As a kid and young adult my mom would very occasionally make me a dish she'd call omelet rice.  In short, it was fried rice wrapped in an egg, omelet style.  She'd use campbells tomato soup as a base and add some kind of meat like chicken.  She didn't make it often but I loved it.
